Roasted
Tomato, Garlic & Chilli Sauce
Ingredients:
6 Large Shallots, unpeeled and halved
6 cloves Garlic, unpeeled and halved
6 Tomatoes
6 Kii Noo Chillies
2tsp Palm Sugar
2tbsp fish sauce
Method:
Preheat grill plate or broiler until extremely hot. Spread
out the shallots and garlic in a large roasting pan. Put the whole
tomatoes and chillies in the pan as well and place on the heat. Roast
for about 10 minutes checking often, until vegetables brown and blister
in spots. When the shallots and garlic are softened and charred,
remove from the pan and set aside. Let the tomatoes and chillies
continue cooking until ther are nicely blackened (they may burst
open in spots). Remove from the pan. Peel the shallots and garlic
and place them in a food processor, stem the chillies and add them
too. Carefully process to a fragrant mush. Add the sugar and process.
Add the tomatoes and carefully grind to a coarse puree. Stir in the
fish sauce and taste, adding more sugar or fish sauce to achieve
a balance of salty, sweet and hot.
