Chocolate and Brazil Nut Biscotti

Ingredients: 
125gm Brazil Nuts 
250gm Plain Flour, sifted 
2tblsp Dutch Cocoa, sifted 
175gm Castor Sugar 
1/2tsp Baking Powder 
3 Eggs, lightly beaten 
Rind of one Orange, grated

Method: 

Roast nuts for 10 minutes. Place in a clean towel and rub to remove skin. Chop finely. Combine flour, cocoa, sugar and baking powder. Combine eggs, nuts and orange rind. Make a well and add to dry ingredients. Stir to form dough, divide into 2 and shape into logs. Bake at 200C for 15 minutes on greased and floured tray. Rest for 5 mins and cut logs. Place back on tray and cook for a further 10mins.
