Cornmeal Muffins
Ingredients:
500gm Plain Flour
500gm Polenta
20gm Baking Powder
Salt, large pinch
250gm Butter, melted
10 Eggs
600ml Milk
2 tsp Ground Chilli Powder
½ cup Fresh Coriander, chopped
Method:
Heat oven to 180ºC. Sift flour, polenta, baking powder and salt together. Stir in butter, eggs, milk, chilli and coriander. Mix well. Place spoonfuls of mixture into greased muffin tins and bake at 180ºC for 12 mins.
