Lumberjack Cake

Ingredients: 
2 Medium Apples 
185gm Dates 
1tsp Bicarbonate Soda 
1 cup Boiling Water 
125gm Butter 
1 cup Sugar 
1 Egg 
1tsp Vanilla Essence 
1 1/2tsp Salt 
1 1/2 cups Plain Flour 

TOPPING 
60gm Butter 
1 1/2 cup Brown Sugar, packed 
1 1/3 cup Milk 
60gm Shredded Coconut

Method: 

Combine peeled, cored and finely chopped apples, dates, bicarb soda and boiling water. Allow to cool until luke warm. Cream butter and sugar until light, add egg and vanilla. Beat flour and salt into creamed mixture alternatively with fruit mixture. Pour into greased and lined cake tin. Bake in a moderate oven for 1hr 10min. 

TOPPING:
Combine butter, brown sugar, milk and coconut in a pan. Stir over a low heat until butter and sugar is melted. Spread over cake. Bake a further 15-20mins until the topping is golden.
