White Chocolate Cheesecake


Ingredients: 
250gm Cream Cheese 
180gm White Chocolate 
3/4 cup Sugar 
3 Eggs 
3/4 cup Sour Cream 
1tsp Vanilla 
Raspberries if desired

Method: 
Use a cookie crumb base with a few ground almonds. Beat cream cheese and cooled melted white chocolate until combined. Beat in sugar until fluffy. Add eggs, sour cream and vanilla, beat on a low speed until just combined. Pour over prepared crust. Press raspberries or any other fruit desired over the top of mix in springform tin. Bake in a 350C oven for about 45 mins, or until centre appears almost set. Refridgerate for at least 4 hours before serving.
